I remember my first encounter with good pancakes was back in 1996 at a Madras club event that I had attended with my father's boss and his family. A kind-looking British man was manning a station that served checkered Vanilla pancakes with fruits and honey. He was shaping them directly on the skillet instead of the shaped grill that we see nowadays at some outlets. I must have had more than my fill because I don't remember eating anything else after that ๐. After that day my next encounter was with my wife at Hampi and damn I was hooked again. So when we decided to start a cafe Pancakes were the first dish we introduced and since then they have been a part of our breakfasts, sometimes lunches, and now a favorite of our daughter too.
I am sharing with you the recipe for eggless "Chocolate Pancakes" that I made for my daughter this morning. I have used a DIY premix pack, which you can get at a nearby store or in e-stores but you can use regular flour, raising agents, and a light amount of sugar to make these. The best part of making pancakes is that you can be as creative as you want without worrying about the crumb structure or the fluff. So without taking up further of your time, here is my recipe:
Eggless Chocolate Pancakes Recipe For Breakfast
Ingredients for Eggless Chocolate Pancakes
Tick (✔) as you gather each ingredient
Chocolate Chips / Chopped Chocolate: 1/4 Cup or 2-3 Tbsp
Milk (Regular / Soy): 10 Tbsp
Oil / Butter: 1 Tbsp
Vinegar / Lemon Juice: 1/8 Tsp (5-6 Drops)
Go Donutz Vanilla Pancake DIY premix pack: 1 Pack (125 Gms)
Chocolate sauce: As per liking

Steps to make Eggless Chocolate pancake:
Tick (✔) as you finish each step
Soften the chocolate chips / chopped chocolate at room temperature
Now make the eggless pancake batter using vanilla flavoured DIY premix pack, milk, butter, and vinegar, and add the softened chocolate to it. Mix well until fully combined
Heat a tawa on medium flame and grease it with butter. Pour 1 and a half ladles of the pancake batter and spread a little
Let it cook on medium flame and turn once cooked from one side. Let it cook well before removing it from tawa
Repeat steps #3 & #4 to make two more pancakes
Pour a generous amount of chocolate sauce and garnish with more chocolate if you like. Enjoy while it hot
